Shanghai cuisine uses a variety of cooking methods including baking, stewing, braising, steaming and deep-frying. Salted meats and preserved vegetables are also commonly used to enhance various dishes. It absorbs the qualities of "Jiangsu and Zhejiang cuisines" such as Hangzhou cuisine, Ningbo cuisine, Huizhou cuisine, Huaiyang cuisine, Suxi cuisine as well as Western cuisine.
